Local Recipes - Dingman Township's Apple Mint Crisp
Courtesy of the office staff Dingman Township 1 tablespoon of butter, softened 1 cup sugar 1 cup Flour 1/2 teaspoon baking powder 1 egg 1 tablespoon dried mint leaves 1 tablespoon ground cinnamon 5 to 6 medium apples, peeled, cored and cut into 1/4” Serve warm over your favorite Ice-cream or whipped cream. Preheat the oven to 350 degrees F. Coat the bottom and sides of an 8X8x2” baking dish with the butter. Set aside. Combine the sugar, flour, and baking powder sifting them together into the bowl. Make a well in the center and drop in the egg. Mix together until the egg is absorbed into the flour. In a large bowl, mix together the mint and the cinnamon. Add the apples and toss until the apples are coated. Arrange the slices in the baking dish and scatter the flour mixture over them, spreading and pressing gently to cover the apples completely. Bake in the center of the oven for 45 minutes, or until the top is crusty.
